Higher Mercury, Arsenic Levels In Gluten-Free Diets
(Chicago, IL) — People on gluten-free diets tend to have higher levels of two toxins in their body. University of Chicago researchers found levels of mercury and arsenic were elevated in the blood samples of people who avoided gluten. It’s not clear exactly why, although those toxins tend to accumulate in rice, which is commonly used as a substitute for ingredients containing gluten. It’s also not known if the mercury and arsenic levels are high enough to have any health effects. The findings appear in the journal “Epidemiology.”
